Crockpot Chicken Low Mein

Asian food is definitely not usually keto friendly. This recipe allows you to have something Asian like without getting out of ketosis.

This recipe does call for low carb noodles. Everyone is not a fan of these, though some people swear by them. I am on the side of not caring for them. I will usually sub Zoodles whenever I have recipe for low carb noodles.

Instructions

  1. Slice chicken into strips. Whisk together the marinade ingredients and place the sliced chicken in the marinade. Coat with the marinade and cover. Place in the refrigerator for at least 30 minutes.
  2. Spray the inside of crockpot with non stick spray. Place the chicken in the crockpot and cook on low for 1-2 hours.
  3. Remove chicken from crockpot and place garlic, ginger and Bok choy in the bottom. Place the chicken back on top of Bok choy
  4. Whisk together the sauce ingredients and pour on top of meat.
  5. Cook on high for an hour stirring occasionally to distribute sauce.
  6. About 10 minutes before the cooking time is done, prepare the noodles.(If you are not a fan of low carb noodles, you can substitute zoodles. It will not be quite like chow mein but will still taste delicious.)
  7. Add the noodles to the crockpot and mix in till well coated with the sauce. If you like a thicker sauce add in the xanthan gum now.
  8. Cook for an additional 10-15 minutes on high.
