Poundcake is the perfect dessert. You can top it with berries or whipped cream. Sugar free chocolate sauce is also great with poundcake. I have even crumbled it up and used it as a topping. This cake can be frozen so you can make one to have on hand when company stops by.

Instructions

  1. Preheat oven to 350 degrees.
  2. Whisk together the flour, salt and baking powder.
  3. In a large bowl, mix the butter and swerve together. Mix on high until light and fluffy.
  4. Add in the cream cheese and vanilla. Mix well until fully incorporated. Add the eggs one at time mixing between each addition.
  5. Slowly add the dry ingredients a little at a time. Mix until batter is smooth.
  6. Pour the batter into a greased 8 inch loaf pan. Bake in preheated oven 30-40 minutes. Cake is done when golden brown and a toothpick inserted comes out clean.
  7. Let cake cool before removing and slicing.
