If you done have an Instant Pot, then go out and get one. This new type of pressure cooker is one of the best appliances I have ever gotten. There are so many things you can do with them.

This recipe is so much quicker to make than in the oven. It is also delicious. A chocolate cheesecake is about as decadent as you can get. You could serve it at a party or just as a special dessert for your loved ones.

Instructions

  1. Line a 7 inch springform pan with parchment paper. Preheat oven to 350 degrees.
  2. Melt the butter. In a bowl, combine all the dry ingredients for the crust. Add the melted butter and stir with a fork.
  3. Press the crust into the bottom of the lined pan. Bake in the oven for about 7-8 minutes. Remove and put aside while preparing the filling.
  4. Cream together the cream cheese, erythritol, and cocoa powder until thoroughly combined. (Taste the mixture for sweetness and add more sweetener if needed)
  5. Mix in the egg, then add the 2 yolks.(For best results the eggs should be room temperature)
  6. Melt the chocolate in microwave. Add the sour cream, heavy cream, vanilla, and melted chocolate and mix until incorporated.
  7. Pour the mixture on top of the crust and smooth it out.
  8. Put the rack that comes with the pressure cooker inside the cooker. Add 1 1/2 cups water to the cooker.
  9. Cover top of cheesecake pan loosely with foil to prevent condensation from dripping on cake. Place pan on top of rack.
  10. Cook at maximum pressure for 20 minutes. When finished let pot do a natural pressure release. Usually around 15 minutes or so.
  11. Remove cover and carefully remove cheesecake from the pot. Place on a cooling rack. Let cool for at least an hour, then place in fridge for a couple hours.( If allowed to refrigerate overnight, the results are better.)
  12. Serve at room temperature and enjoy.
