- Cut the pork into cubes. Heat the oil in a large skillet. Brown the pork in the skillet.
- Remove the chilies from the can and put the liquid aside to use later. Chop the garlic cloves. Process the chilies, garlic, and onions in a food processor until a thick paste is formed.
- Add the spices to the browned pork and stir. Add the pureed chilies to the pan and continue to stir. Add in the water and the liquid from the chilies. Stir all the ingredients together and turn the burner to low. Cover the pan and cook for 1-1 1/2 hours.(Pork should be very tender when done.)(May be necessary to add a little liquid while cooking)
- Taste if salt and pepper are necessary. Can be served over cauliflower rice. Also nice ladled into a bowl with a fried or poached egg on top.
