Ingredients
- [Guacamole] 1 Avocado
- [Guacamole] 1/2 Lime
- [Guacamole] 1/4 tsp Garlic Powder
- [Guacamole] Salt
- [Guacamole] Black Pepper
- [Meatballs] 1 lbs Ground Chicken
- [Meatballs] 2 tbsp Flaxseed Meal
- [Meatballs] 2 tbsp Almond Flour
- [Meatballs] 2 Onion
- [Meatballs] 1/2 Red Bell Pepper
- [Meatballs] 2 tbsp Cilantro
- [Meatballs] 1/2 tsp Garlic Powder
- [Meatballs] 1/2 tsp Salt
- [Meatballs] 1/2 tsp Red Pepper Flakes
- [Meatballs] 1/2 Lime
- [Meatballs] 2 oz Shredded Cheddar Cheese
Instructions
- Preheat oven to 350F. Set Cheddar Cheese aside in a bowl. Prep all of the vegetables and add to bowl with ground chicken.
- Chop 2 tbsp. cilantro and add to the bowl. Season with spices, then juice 1/2 lime into the chicken meatball mixture and add the zest.
- Add 2 tbsp. almond flour and flaxseed meal, then mix everything together well.
- Roll out the meatballs as uniform as you can get them and bake for 15-18 minutes or until cooked through.
- Make the simple guacamole by mashing together avocado, lime juice, garlic powder, and salt and pepper to taste.
- Serve with simple guac for a delicious meal.
