Instructions

  1. Cook bacon and remove to paper towels for later. Keep bacon fat in the pan.
  2. Chop up the vegetables. Cook pork rinds in bacon fat, then add diced vegetables. Once onions are almost translucent, add cilantro and mix together.
  3. Whisk the eggs lightly. Add to the pan and cook until done.
  4. Cube avocado and fold into the eggs.
