Cheesy Cauliflower Mac and Cheese

I love mac and cheese. I miss mac and cheese . This may not be the traditional mac and cheese, but it is a great cheesy substitute .

I like cauliflower and cheese so of course I love this recipe. Give it a try for people who don't like cauliflower, they might be surprised. It is comfort food that tastes great as a leftover also.

Instructions

  1. Grease a 9x9 casserole dish and preheat oven to 375 degrees.
  2. Cut the cauliflower into florets. Add 1/2 tsp of salt to a large pot of water and bring to a boil. Add the cauliflower florets to boiling watering cook until tender.
  3. Drain cauliflower and set aside.
  4. Place cream in a sauce pan and bring to simmer. Stir continuously while adding in cream cheese and mustard.
  5. After mixture thickens, remove from heat and slowly whisk in 1/2 the cheese. Add garlic powder and salt and pepper to taste.
  6. Pour the cheese sauce over the cauliflower and mix gently.
  7. Put the cauliflower mixture into the dish and sprinkle with remaining cheese.
  8. Bake 15 minutes until cheese is slightly browned.
