Cheese and Zucchini Muffins

These muffins are great for anytime of day. They are also easy to make. If you want to go really easy, you can buy the zucchini already grated. Make sure to heat the muffins, the cheese being gooey is what makes them so delicious.

Instructions

  1. Preheat oven to 350 degrees. Spray muffin wells with cooking spray.
  2. Melt the butter. Mix the butter, zucchini, salt and pepper together.
  3. Add the eggs, oregano and baking powder. Mix the ingredients together well.
  4. Add in the coconut flour and stir well. Batter will be thick.
  5. Stir in the cheese until mixed in.
  6. Fill the muffin wells to the top. (It is ok to overfill since the muffins don't rise much.)
  7. Bake for 25 minutes. The muffins should be nice and golden.
  8. Allow the muffins to cool slightly. Muffins are best served warm.
