Cheddar Chicken and Broccoli Casserole

This is a classic casserole. it is an all inclusive meal. You can use chicken breasts but rotisserie chicken will also work. I like the convenience of rotisserie chicken. The sauce is nice and creamy and the broccoli goes along great with it.

Instructions

  1. Preheat oven to 450 degrees.
  2. Chop broccoli and steam for a few minutes.( If you use frozen broccoli no need to steam.)
  3. Shred the chicken into bite sized pieces.
  4. Combine the chicken, broccoli, sour cream, and olive oil in a large bowl. Stir together the ingredients.
  5. Spray a casserole dish with cooking spray. Spread the chicken mixture into the casserole dish. Press lightly into the dish.
  6. Drizzle the heavy cream over the casserole. Sprinkle the spices over the top of the casserole.
  7. Sprinkle the shredded cheese over the top of the casserole. Next sprinkle the crushed pork rinds over the top.
  8. Bake for 20-25 minutes. The casserole should be bubbly and slightly brown around the edges.
