This casserole is the perfect breakfast for a full house. It is easy and can be prepared the night before and reheated the next day. The recipe does not call for cheese but you are welcome to add whichever cheese you like. If you add cheese, remember to change `the macro count.

Instructions

  1. Preheat oven to 350 degrees. Spray a 9x13 pan with cooking spray.
  2. Slice the zucchini into thin rounds. Cut the cherry tomatoes in half lengthwise.
  3. Whisk together the eggs, heavy cream, salt and pepper. Whisk until well combined.
  4. Stir in the mushrooms, zucchini, spinach and ham.(If you want to add cheese you could do it now)
  5. Pour into the prepared pan. Top with the sliced tomatoes.
  6. Bake in oven for 30-35 minutes. Eggs should be set and the edges just starting to brown.
  7. Cool slightly. Slice and enjoy.
