- Mix the eggs, coconut cream and vanilla together. Mix until smooth and fluffy.
- Whisk together all the dry ingredients. Add the dry ingredients to the wet. Mix until the batter is smooth.
- Heat an oiled skillet to medium. Pour the batter into the skillet.(A large spoonful makes about 10 pancakes) Drop blueberries onto the pancakes. Cook the pancake until bubbles form on top. Flip the pancake and cook another minute or so.
- Serve with butter and sugar free syrup or whipped cream is also nice.
