There are a lot of chocolate cake recipes out there. The reason for that is almost everyone loves chocolate. This recipe is so moist and delicious it might be the only one you ever make.

The addition of zucchini helps the texture and adds some fiber to the cake. The cake can be eaten plain but it is great with a vanilla or chocolate frosting.

Instructions

  1. Preheat oven to 350 degrees. Spray a 9x13 pan with cooking spray.
  2. In a large bowl, stir together all the dry ingredients.
  3. In a separate bowl, beat the eggs. After beating the eggs, add the coconut oil and vanilla. Mix well.
  4. Mix the egg mixture into the dry ingredients. After the ingredients are well incorporated, stir in the zucchini and chocolate chips.
  5. Bake in the preheated oven for 30-40. Cake is done when toothpick inserted into the center comes out clean.
  6. Cool on a wire rack. Frost with chocolate buttercream or vanilla buttercream frosting if so desired. ( Frosting is not figured into the nutrient information.)
