Beef and Egg Breakfast Casserole

Bacon, sausage and ham are usually my go to meats for breakfast. I like the idea of using ground beef for breakfast casserole. Of course, it doesn't have to be exclusively for breakfast. This is a casserole that can be eaten anytime of day.

Instructions

  1. Preheat oven to 350 degrees. Spray a 9x13 Pan with cooking spray.
  2. Heat a nonstick skillet over medium high. Add in the olive oil, onions and paprika and cook until the onions are translucent.
  3. Add the ground beef to the skillet and break apart. Cook until the ground beef is cooked through.
  4. In large bowl, whisk together the eggs, heavy cream, salt and pepper. Continue whisking until the ingredients are well combined.
  5. Stir the cheese into the egg mixture. Set aside enough cheese to sprinkle over the top of the casserole.
  6. Stir in the ground beef. Mix well.
  7. Pour the mixture into the prepared pan. Sprinkle the remaining cheese over the top of the casserole.
  8. Bake in the oven for 40-45 minutes. The eggs should be fully set.
  9. Remove from oven and let cool slightly. Enjoy!
