Bacon Wrapped Meatloaf

Meatloaf is the ultimate comfort food. There are a ton of variations you can make. This is a delicious meatloaf made even better since it's wrapped in bacon.

I used to make meatloaf for my older son's birthday. I was his favorite meal along with mashed potatoes. Now I can make him meatloaf and mashed cauliflower and he can still enjoy his favorite meal.

Instructions

  1. Preheat oven to 375F.
  2. Dice the green pepper, onion, and garlic.
  3. Add to a large bowl with the ground beef, eggs, almond flour, mozzarella, Parmesan cheese, Worcestershire sauce, salt, and pepper. Use your hands to combine.
  4. Shape mixture into a loaf and place in a 9x13 baking dish.
  5. Cut the bacon slices in half and drape over the meatloaf.
  6. Whisk together the ketchup and Italian dressing until combined. Spoon mixture over the bacon and spread to coat.
  7. Bake for 25 minutes. Increase heat to 425 and bake an additional 20 minutes or until temperature reaches 160 degrees.
  8. Let stand 10 minutes before slicing and serving.
