Bacon and Mushroom Breakfast Casserole

I love the ease of casseroles and this breakfast one is one of my favorites. Bacon and mushrooms along with some cheese sounds like a match made in heaven. Of course there are people who don't like mushrooms, guess they will just have to eat some plain eggs.

The serving size is rather large. You could always make it smaller to lower your macros.

Instructions

  1. Preheat oven to 400 degrees. Grease a 9x9 baking dish.
  2. Cut the bacon up into pieces.(kitchen sheers work great for this)
  3. Add the butter to a skillet and melt. Cook the mushrooms and bacon together in the skillet. Bacon should be nice and cooked.
  4. Place the cooked mushrooms and bacon in the bottom of the baking dish.
  5. In a large bowl, whisk together the eggs, heavy cream, onion powder and salt and pepper. Stir in the cheese, leaving a little to sprinkle over the top of the casserole.
  6. Pour the egg mixture over the bacon and mushrooms. Sprinkle the top with the cheese that was left.
  7. Bake for 30 minutes or until the eggs are set and the top is golden brown.
