- In a bowl set over a pan of barely simmering water so you can melt the chocolate. You want to stir the chocolate until it is smooth and then set it aside.
- Grab your food processor (the one over there) and combine the avocados, Swerve, cocoa powder and vanilla extract. Process that bad boy on high until the ingredients have combined well. Add water, 1 tablespoon at a time (go up to 4 if needed), until all avocado chunks are blended and the mixture is smooth and creamy.
- Slowly pour the melted chocolate in the food processor and begin to process again until smooth.
- You now have some buttercream that you can either pipe or spread onto your favorite cake or brownies. Or if you're like me you'll just eat it straight up because who needs to spend time baking a pastry?
