- Whisk together the dry ingredients.
- In a separate bowl whisk the eggs. Add in the oil, milk and vanilla. Add all the wet ingredients to the dry. Mix until well combined. If the batter is too thick add a little more milk.(Taste for sweetness. Add more sweetener if desired.)
- Heat a skillet to medium high. Slightly oil skillet and spoon pancake batter into it. (Pancakes should be about 3 inches in diameter.) Cook until bubbles start of form then flip and cook another 1 1/2-2 minutes.
- Serve warm with your favorite topping.
