Almond and Coconut Flour Pancakes

Pancakes are one of my absolute favorite breakfast foods. This is a great low carb recipe. It works because the flour combination is just right.

This is a recipe that doesn't have to be just for breakfast. The pancakes freeze well and can be topped with a variety of toppings. Berries and whipped topping can be added for a nice dessert.

Instructions

  1. Whisk together the dry ingredients.
  2. In a separate bowl whisk the eggs. Add in the oil, milk and vanilla. Add all the wet ingredients to the dry. Mix until well combined. If the batter is too thick add a little more milk.(Taste for sweetness. Add more sweetener if desired.)
  3. Heat a skillet to medium high. Slightly oil skillet and spoon pancake batter into it. (Pancakes should be about 3 inches in diameter.) Cook until bubbles start of form then flip and cook another 1 1/2-2 minutes.
  4. Serve warm with your favorite topping.
