- Put all the ingredients in a blender and blend until smooth.
- Spray 2 ramekins with cooking spray or you could use 2 mugs if that is all you have. Pour the batter into the ramekins splitting in half.
- Microwave one cheesecake at a time. Microwave for 60 seconds and check to see if the center is done. If it is still glossy microwave for 30 seconds more. Do this until the center is no longer wet. Let cool for 5 minutes then place in fridge for a couple of hours.
- Top the finished cheesecake with sugar free whipped cream or any other desired topping.
