These pancakes are great for breakfast. They are so easy since you put all the ingredients into a blender and blend. You do have to let the batter sit for 5 minutes but that is all you have to do. The fact that they freeze well and can be reheated in a microwave is a plus.

Instructions

  1. Place all the ingredients in blender and blend until fully mixed. Let sit for about 5 minutes.
  2. Oil a skillet and heat to medium high. Pour 1/3 cup of batter into the skillet. Cook until the edges are brown.(This batter does not bubble like traditional pancakes.) Flip the pancake and cook about another minute.
  3. Serve with some butter and syrup of your choice. Note: These pancakes freeze well so make enough to have on hand whenever you don't feel like cooking breakfast.
